Ethiopia Organic Yirgacheffe Oromia – Light roast
Don’t be fooled! Even though this coffee is lightly roasted, it carries an extravagant amount of flavors! The Yirgacheffe is a bright coffee with high notes of lemon zest and citrus fruits. Raisin undertones compliment the turbinado sugar-sweet finish. It is delicate and simple; yet well balanced and clean. Perfect as a morning coffee or as an afternoon cup of joe. The Yirgacheffe is like a gift from Ethiopia to the rest of the world.
Ethiopia Organic Sidama Amaro Gayo – Medium roast
We are super excited because not only is this coffee extremely unique, but the story behind the co-op is even neater. The owner of the coffee farm that produces the Amaro Gayo is Ethiopia’s only female miller and exporter! This particular coffee is higher priced, but is very deserving of it. Not only is it a very high quality and extremely tasty coffee, but the proceeds are also used to develop the area.
What flavor experience do you get out of this Sidama? Let’s just say it’s an explosion of goodness. Grind up the beans and smell the cherries and nuts, earthiness, toasted carmel, and some citrus. As it brews, smell some hints of blueberries and sweet-like-surgery floral-ness. Drink it and taste overtones of blueberries and undertones of citrus. Buttery carmel continues to develop with a sweet chocolate finish that tingles all the way to the back of your tongue.
Sumatra Organic Gayo – Dark roast
Rich full-body. Dark. High notes of fruit and some floral. Finished with a vanilla tobacco-like chocolatey mouth feel that is pleasantly smokey.
We’re extremely proud of our Sumatra coffee because we have extremely high taste standards for Sumatra. Many Sumatra’s have an aged bite to it, that many believe to be a strong characteristic for a well-rounded Sumatra. Don’t let that fool your taste buds. Coffee does not get better with age. Sumatra’s are unique with the characteristic of having a full-body and a taste profile that can sometimes be considered “funky.” We don’t mind that “funkiness” because that is what makes the Sumatra character unique, but “funk” and “age” are not what we strive for together.
Our Sumatra is roasted lighter than many, bringing out an extremely tasty cup. As with all coffees, we strive to highlight the character of the cup instead of muting it. We are even more strict with the Sumatra, and controlling tightly to ensure we do not let the Sumatra roast too dark.
Roast: In between a Full City and Full City+, barely past the 2nd crack. Certified Elan Organic.
Mexico Organic Chiapas – Light roast
Chocolate, fruit, and nuts. The three staples in life that keep you going, and this coffee has it all.
Grind the coffee and take a whiff of the milk chocolate and peppery spice. The Chiapas is very sweet, almost like it is naturally sweetened and is complimented by the flavor of sweet milk chocolate. There are tastes of strawberries with a slight citrus tinge.
The finish on the coffee, although brief are hints of brown sugar, carmel apple, and nuts. A mild coffee with a clean finish.
This would definitely make a good dessert or evening coffee…
Nicaragua Segovia – Medium roast
The Nicaragua Segovia is a hands down, good ‘ole classic cup of coffee.
It has great body, and well-balanced flavors. You know you’ll have a well rounded coffee when drinking this Nicaraguan coffee!
Enjoy your first sip with sweet bourbon vanilla, hazelnut, and soy – a very interesting cup character nonetheless! There is a nice baker’s chocolate flavor as the bittersweet chocolate compliments with the syrupy finish.
The Nicaragua Segovia is a very well balanced coffee with good body (not too heavy and not too thin). If you want an interesting, yet mellow coffee, give this coffee a try!
Guatemala Huehuetenango – Medium Roast
Guatemala coffees are an extremely flavorful, well-grown, and overall tasty coffee. We think coffee from the Huehuetenango region are one of the best tasting the country has to offer – complexity, big flavor, and distinct in flavor. We rank the Huehuetenango very highly on our cupping scores, and are very glad we’ve added this coffee as an addition to our offerings.
As we ground the coffee, it filled our noses with soy, berries, and a pleasant coziness. We enjoyed the complex flavors of marshmallow, spiced-cinnamon figs, and dried candied persimmon. There are hints of honey and nut as the coffee has a pleasant honeysuckle-citrus finish.
The body is well-balanced, complex but not too much that it’s difficult to discern the tastes, and has good acidity. There is a very pleasant and clean aftertaste.
